We offer our TaMaLitOs on corn husk (traditional) or banana leaf (oaxaqueño) as per your preference. Our fillings are described below:

Rajas and cheese
This dish is mainly made of sliced Poblano peppers (chiles Poblanos); while incredibly aromatic they are quite mild in heat but full of flavour and with the occasional hot one thrown in the mix.
When dried, Poblanos become anchor peppers, which are widely used in most Mexican moles.
Poblano peppers with mozzarella cheese make the perfect combination. It is not as spicy as it looks like. You have to try it.

It's the generic name for a number of sauces originally used in the Mexican cuisine, it often refers specifically to mole Poblano.
Come in various flavors and ingredients, including chili peppers, spices, day-old bread, nuts and chocolate.
The tamale is filled with cooked chicken mixed with the mole sauce, kind of sweet and sour. This dish may be a good introduction to the TaMaLitOs, not spicy at all with a chocolate flavour. Kids love it!

Made with tomatillos (green tomatoes) + cooked chicken. The main ingredients are pureed cooked tomatillos with jalapenos and white onions. This dish can range in spiciness from mild to mouth-searing (all depends how hot the peppers are) however we try to keep it medium and not crazy hot. Very similar to the mole, we fill the TaMaLitO with shredded chicken mixed with the green sauce. This is one of our client's favourites.
