What are TaMaLitOs?

TaMaLitOs are a favourite comfort food and traditional Mexican dish made of corn-based dough and wrapped in corn husks or banana leaves before being steamed (wrapping should be discarded before eating).

Our TaMaLitOs are totally made from scratch, which means no preservatives, colorants or chemicals added.
Our TaMaLitOs are filled with quality ingredients (sourced locally when possible) like meats, cheese, fruits, vegetables or any preparation according to taste, and both the filling and the cooking may be seasoned.
Our 
TaMaLitOs are never frozen, freshly steamed from our pots to your table!

Traditional TaMaLitOs

Mole and chicken

Very traditional sauce originally used in the Mexican cuisine (you could find mole principally in  village weddings and typical celebrations) made with selective mix of dried peppers, regional spices, day-old bread, nuts and cocoa, just to mention some.

Our Mole and Chicken TaMaLitOs are filled with cooked shredded chicken joined with the mole sauce.

Definitely flavourful,
 not spicy but not boring.​

Salsa verde and chicken

Our Salsa Verde cooked from scratch, with original tomatillos (Mexican husk tomatoes), jalapenos, onions, garlic and mixed spices, topped over freshly shredded cooked chicken.

Salsa Verde TaMaLitOs can range in spiciness from mild to mouth-searing (we depend on the peppers mood) however we promise try to keep it mild but always willing to prepare only for you some crazy hot TaMaLitOs.

Salsa Roja, jalapeno & cheese

Our non-fiery, but concentrated batch of Salsa Roja blended with Tomatillos!  This is the same Salsa used for our TaMaLitOs but could be the topper sauce for tacos, grilled meats, and even eggs all around Mexico.

While incredibly aromatic, jalapeno is not scary at all, mild in heat but full of flavour, and thrown in harmless Salsa Roja topped with melted cheese, which produces this perfect combination.

These guys are surprisingly delicious!

Mushrooms and Salsa Verde
Mushrooms joined with our traditional and previously described Salsa Verde: cooked from scratch, with original Mexican husk tomatoes aka tomatillos, jalapenos, onions, garlic and mixed spices, and mixed over freshly seasoned and thoroughly cooked healthy mushrooms.

Primavera Chipotle Sauce and Cheese
 This is our way to say: Mexican Pizza! Any better combination besides tomatoes, veggies, chipotle and cheese? We do not think so.

Veggies have never been so delicious!

Sweet TaMaLitOs

Pineapple and golden raisins 
(Vegan ) 
These sweet things, unlike the savory TaMaLitOs, are not filled. During the process, the corn-dough is mixed with sugar, fresh pineapple and moistened golden raisins in pineapple syrup.

​Specially good for dessert!

Cinammon with chocolate chips
If raisins are just not your thing, who can deny that this combination of cinnamon, chocolate chip,and sugar can create a wonderful variation of this traditional dish.

​This is similar to pink TaMaLitOs from Mexico City but enliven with chocolate chips for having some more fun in just one dessert.

Any savoury TaMaLitO could be steamed for you wrapped in banana leave.
This will enhance moisture and give the unique flavor of our regional TaMaLitOs Oaxaquenos.

Serving by now principally into the Ottawa East-end area, on selected dates during the summer season, we retail our TaMaLitos in some great Farmer's Markets: Beechwood Market , Main Street Farmer's Market, Cumberland Farmer's Market, and more!. 
Before, after and during same period our
TaMaLitos booth might be traveling around Ottawa area and beyond
(we do West-end scheduled drop-off).

How to reheat your TaMaLitOs

Using a cooking steamer
(recommended)
  1. Set up your steamer by filling 1/4 of steamer with water.
  2. Turn heat up to medium.
  3. Next, arrange tamales around the edge of steamer with open end up.
  4. If TaMaLitOs are only refrigerated, steam for 15-20 minutes.
  5. if TaMaLitOs are frozen, steam for 20-30 minutes.
​Using a stove or grill
  1. Place a pan on a stove range and set heat to medium.
  2. Add a teaspoon of your favourite cooking oil (olive oil, vegetable oil, etc.).
  3. Remove the corn husk or banana Leaf from TaMaLitOs and place them in the pan.
  4. Flip your TaMaLitOs over every 2-3 minutes.
  5. When surface skin on TaMaLitOs are crispy, your tamales are ready to eat!
​​Using an oven
  1. Pre-Heat over to 425 degrees.
  2. Remove corn husk or banana leaf wrap from your TaMaLitOs.
  3. Lightly coat the pan with butter.
  4. Place TaMaLitOs in the pan.
  5. TaMaLitOs are ready when the surface is kind of dark brown and crispy, between 30 - 45 minutes.
